Earlier today I confessed to my Taylor Swift fandom and now I’m quoting Lily Allen. Whatevs. It’s not like I have any followers to lose….

Picnic in the sun: 

 
Somewhat ironically weekends spent at college (studying nutritional therapy) are typically when I eat most poorly.

So it was kinda nice to have a plan today. I’m eating to set calories and macros at moment so had to swerve the planet organic cake section and booja booka aisle.

Thanks Planet Organic – this impromptu picnic would have been hard in a town with no decent healthy food outlet. But don’t think I didn’t notice you have shrunk your boxes!

Roasted chickpeas MFs!

  Can’t believe I haven’t made these in ages. Usually I use oil but am embarking on a new eating, training regime and eating lower fat than usual right now:

1 x tin chickpeas, drained

Juice of 1 lemon

Chilli flakes

Ground coriander

Ground cumin

Paprika

1 tbspn tamari

Whack in the oven at 200 until brown and chewy. Make them quick and thank me at your leisure.

I’m having half tonight with a salad and taking the rest to work tomorrow #BOOM

Easter Smoothie

Which is me pretending I don’t have chocolate for breakfast regularly. Shhhhh.

 

I did put a little bit more decadence in this one though as a nod to the Easter eggs I won’t be eating.

About a cup of coconut milk

1/2 frozen banana (more if you want a thicker smoothie)

1 tsp chia, flax & maca

2 tsp cacao

1 tbsb dessicated coconut – toast it if you have time. I didn’t this morning, I’ve changed.

1 tbspn EACH of cashew and almond butter. I know!

Squeeze of date syrup

If I had cacao nibs I’d have bunged them in to but I didn’t. Next year. Ha ha I’m kidding – next week 😉

Blend it lots and serve topped with vanilla pod sprinkles and date syrup. Thank me by email for rocking your breakfast – you’re WELCOME! 

One for now, more for later

Taking advantage of a day off by making some granola that I can eat for the rest of the week when I have less time.

Just mix about 2 cups of oats with 1 cup of nuts (I used brazils, almonds & pecans) add cinammon, nutmeg and coconut oil to taste and bake for 20 – 30 minutes until brown. Add date syrup if you like. Why not?

Finish it off anyway you like – I’ve gone for raspberries, flax seed mix, acai and coconut milk today.

So good, the house smells amazing and I have four more breakfasts in the bag. If I don’t cane the lot today that is 🙂
