Easter Smoothie

Which is me pretending I don’t have chocolate for breakfast regularly. Shhhhh.

 

I did put a little bit more decadence in this one though as a nod to the Easter eggs I won’t be eating.

About a cup of coconut milk

1/2 frozen banana (more if you want a thicker smoothie)

1 tsp chia, flax & maca

2 tsp cacao

1 tbsb dessicated coconut – toast it if you have time. I didn’t this morning, I’ve changed.

1 tbspn EACH of cashew and almond butter. I know!

Squeeze of date syrup

If I had cacao nibs I’d have bunged them in to but I didn’t. Next year. Ha ha I’m kidding – next week 😉

Blend it lots and serve topped with vanilla pod sprinkles and date syrup. Thank me by email for rocking your breakfast – you’re WELCOME! 

Love is like a (nutri) bullet

Anyone who follows me on instagram or twitter will know that I splashed out on a nutribullet recently and have been blending up a storm all week. I did my first juice cleanse last week (blog post on this to follow over the next couple of weeks) and so this blender was working overtime and I was forced to branch out from my usual banana and nut milk based smoothies a little.

Here are two of my new favourites that I had recipe requests for on my facebook and on instagram page. Thank you Astrid, Mum, Gemma, Nutribullet & Roshi – these are just for YOU!

Cacao Mint Smoothie

Cacao Mint Smoothie

1 cup water

Handful of cashews (about 10)

4 dates (ideally fresh but dried will work just be sweeter)

1 tbsp chia seeds

1 tsp cacao

1 tsp maca

1 drop peppermint essence

Blend all the above and serve over ice. You could leave the peppermint out for a regular chocolate flavour. Or substitute with orange essence to give Terrys a run for their money.

Thai Cold Soup

Thai ‘Soup’

Juice from a young coconut (or coconut water OR a tin of coconut milk at a push)

1 cup water

1/2 red chilli chopped

1/2 tsp ground coriander

1/2 tsp ground cumin

Juice & zest of 1 lime

Big handful of coriander

Salt & pepper to taste

Blend till smooth – can eat immediately or chill before serving and garnish with more coriander and slices of lime.
