Breakfast like a king

I can’t believe how many people still skip breakfast – I never skip ANY meal if I can help it – but then I can sometimes get excited about my meals days in advance….

Forgot to eat

 

Here is one of my favourite quick breakfasts:

  • Melt a little coconut oil in a frying pan and add any nuts and seeds you fancy (I have used brazils, walnuts, hazlenuts, almonds and punpkin & sunflower seeds here)
  • Cook them gently till brown adding cinnamon and nutmeg
  • Then add all the trimmings you fancy – I have gone with berries, oats, maca, chia, flax mix and almond butter here. If I was feeling a bit masterchef I could call it a deconstructed granola
  • Add your favourite milk (I like coconut or almond) and off you go
  • You could leave out the oats if you were avoiding carbs although I think breakfast is the perfect time to eat them and set yourself up for the day.

Tip: You should always make at least four times more than you need so that you can store the remainder for EVEN quicker breakfasts over the following week. Or pick at it throughout the day till there’s none left. Depending on the kind of day you’re having.

And finally of course EVERYTHING tastes better outside – that’s a scientific FACT!
